(Feb. 18, 2021) Writer Lentils have never garnered the esteem in America I have seen them showered with in places I have traveled in Europe.

In the Umbria region of Italy, Castelluccio lentils are a prized regional specialty that have been grown for centuries in a picturesque valley near the town of Norcia. They are tiny in size, tan in color, thinskinned and have a supple texture that does not disintegrate into mush when cooked.

Likewise in France, lentilles du Puy from the Auvergne region are revered for having similar qualities, though these French lentils have a prettier, more eye-catching, speckled- green color and are sometimes simply referred to as French green lentils.

Parisian-based American cookbook author David Lebovitz once devoted an entire blog post to lentilles du Puy, heralding them as “the caviar of lentils.”
